1/4 cup of Oats
3 tbs Chia seeds
1/2 Coconut Water
1 Paw Paw
1/2 cup of Mixed Berries
Sprinkle of Shredded Coconut
Sprinkle of Macadamia nuts
Combine oats, chia seeds and coconut water into a small bowl and stir together with a spoon.
Place mixture into the fridge and keep overnight so the mixture expands and the oats and chia seeds absorb the coconut water.
This will create a thickened appearance. Tip: If you are like me and sometimes forget to leave your oats overnight and you wake up wanting to create this breakfast.
You can leave the mixture in the fridge for 45mins - 1 hour and it will still have the same consistency.
Cut your Paw Paw in half and remove the seeds with a spoon.
You will have quite a bit of Paw Paw flesh inside so remove this carefully in large sections. Now you can cut the inside flesh which has been removed into slices.
With one side of the Paw Paw (that is now hollow) fill this with your overnight oat mixture, fresh berries and diced Paw Paw.
Top with shredded coconut and macadamia nuts.
